Creamy Pasta al Limone
Creamy Pasta al Limone, a basic yet amazing combination between pasta, garlic, lemon, Parmesan, butter, and black pepper. I like to use pappardelle for this and add some fresh parsley on top.
Recipe (for 3-4):
Ingredients:
- 250 g pappardelle, dry
- 50 g butter
- 6 cloves garlic minced
- 1/2 cup fresh lemon juice
- 1 tbsp. lemon zest
- 2 tbsp. olive oil
- 1/2 cup finely grated Parmesan cheese about 1 1/2 ounces, plus additional for serving
- Kosher salt
- 1 tbsp. ground black pepper
- 3 tbsp. parsley, chopped
Instructions:
1. Bring a large pot of water to boil. Add 1 tbsp. salt and cook the pasta for 4 minutes. Keep 1 cup of pasta water for later.
2. In a large skillet over medium heat add olive oil, black pepper, garlic and lemon zest. Stir for about 1-2 minutes until garlic is golden.
3. Add lemon juice and 3/4 of the pasta water. Cook until the sauce reduced significantly and thickened.
4. Lower the heat and add the pasta, 1/4 cup pasta water and parmesan and butter and mix for 2-3 minutes until pasta is cooked and has a creamy texture.
5. Add parsley, mix and serve!
