Creamy Spicy Spaghetti

This Creamy Spicy Spaghetti is one of dishes I keep going back to. It has a nice kick from the chili oil, a smooth, creamy Parmesan sauce, and just the right touch of garlic. It’s a comforting, flavorful meal that always hits the spot.



Ingredients:


- 0.5 lb spaghetti
- 3 egg yolks
- 3/4 cup grated Parmesan cheese
- 3 garlic cloves, minced
- 2 tsp chili oil (reduce if you prefer less spicy)
- 1 tbsp tomato paste
- Olive oil
- Salt & black pepper to taste
- 1 1/2 cups diced tomatoes



Instructions:

1. Cook the spaghetti in a pot of boiling salted water according to the package instructions, then drain, reserving one cup of the cooking water.
2. In a skillet, heat some olive oil over medium heat and sauté the minced garlic until fragrant. Add the chili oil and tomato paste, cooking for 30 seconds.
3. Stir in the diced tomatoes and pasta water (keep some for later). Season with salt and mix well. Cook for about 3 minutes.
4. In a separate bowl, whisk together the egg yolks and grated Parmesan cheese, with a pinch of black pepper.
5. Lower the heat, then add the cooked spaghetti to the sauce along with the egg and Parmesan mixture. Cook everything together for 2-3 minutes, until the sauce becomes smooth and creamy. *You can add pasta water if needed.
