Potato Pizza Muffins

Recipe for 12 potatoes

Ingredients:
- 12 medium potatoes
- 100 g vegan scattered cheese
- 200 g smoked tofu



Pesto:
- 300 g dried tomatoes
- 50 ml oil
- 1 tsp salt
- 2 cloves of garlic
- 1 handful of basil
- 50 g pine nuts



Toppings:
- Fresh basil, chili flakes



Preparation:
1. Boil the potatoes in salted water until soft, about 30 minutes
2. Grate smoked tofu. Mix all the ingredients for the pesto
3. Place the cooked potatoes in a muffin tin while they are still warm and mash them with a glass
4. Fill each potato with sprinkled cheese, smoked tofu, pesto and more cheese
5. Place in the oven at 180 degrees/fan oven for 35 minutes
6. Enjoy with toppings
