Roasted Red Pepper & Herb Chicken & Potatoes
Recipe
- 7-8 Chicken thighs (bone-in)
- 1 tbsp Ghee
- 1 tbsp olive oil
- 1 tbsp Roasted red pepper paste
- 6-8 garlic cloves
- 1 tsp coriander (ground)
- 1/2 tsp Paprika
- 1/2 tsp Fresh thyme
- 2 tbsp fresh dill
- 1 tbsp fresh parsley
- 1/2 of a Lemon juice
- Salt & pepper
Potatoes:
- 1 lb. Baby potatoes
- 1-2 tbsp Avocado oil
- Salt
*Bake at 425 degrees f for 25-30 minutes- flip chicken and bake for another 25-30 minutes or until skin is crispy and golden.
Salad:
- 1/2 large Cucumber
- 1/2 Green onion stalk
- 1 beefsteak Tomato
- 1 Parsley bunch (small)
- Olive oil
- Pomegranate molasses
- Lemon juice
- Salt
